Speck is a traditional, dry-cured ham made from pork, most famously from the Alpine regions. It is lightly salted, seasoned with spices such as juniper, bay leaf and pepper, gently cold-smoked, and then air-dried for several months.

The result is a firm yet tender ham with a distinctive balance of smoky, savoury and mildly sweet flavours. Speck is typically served thinly sliced and enjoyed on charcuterie boards, with bread and cheese, or used to add depth to pasta, salads and warm dishes.
